Short course on the dairy world.
The lessons will be on the 19th of March and the 26th of March 2014 from ca 5-10 PM

The courses will be held by Elisa Lunari, official ONAF cheese-taster.

First lesson: MILK

First part

-    Definition of type, development and composition of milk
-    The major components of milk
-    The signs of microbiology in milk
-    The redevelopment and preservation of milk
-    The classification of cheese
-    Basic cheese-tasting and the importance of our 5 senses

Second part

-    Tasting techniques and wine tasting
-    Open discussion
-    Prepare one or more cheese-dishes for the other participants

Second lesson: ON THE ORIGINS OF CHEESE

First part

-    Revision of the basics from the first lesson
-    Brief history, the meaning of cheese, taste and methods
-    How the cheese is formed, odor, flavor and texture
-    The cheese-maker’s tools
-    The DOP, IGP, STG
-    Choose between cheese or wine tasting in the kitchen

Second part

-    Observation of the cheese, reading labels etc.
-    In-depth analysis of technical tasting and tasting
-    Open discussion
-    End of course dinner

Course fee: €150,00 per person

Discount for people of the same group e.g. €250 for 2 persons instead of €300.
